- 1/2 cup chocolate protein powder (60g)
- 1/2 cup unsweetened cocoa powder (40g)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsweetened applesauce (240g)
- 1/2 cup Greek yogurt (120g)
- 1/2 cup almond milk (120ml) or any milk of choice
- 1/4 cup honey or maple syrup (60ml)
- 2 large eggs
- 1 tsp vanilla extract
Frosting:
- 1 cup Greek yogurt (240g)
- 1/4 cup chocolate protein powder (30g)
- 2 tbsp unsweetened cocoa powder (15g)
- 2-3 tbsp honey or maple syrup (30-45ml)
- 1 tsp vanilla extract
Instructions:
-
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper.
-
Prepare the Dry Ingredients: In a large bowl, whisk together the oat flour, almond flour, chocolate protein powder, cocoa powder, baking powder, baking soda, and salt.
-
Prepare the Wet Ingredients: In another bowl, combine the applesauce, Greek yogurt, almond milk, honey or maple syrup, eggs, and vanilla extract. Mix until well combined.
-
Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
-
Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
-
Prepare the Frosting: In a bowl, mix together the Greek yogurt, chocolate protein powder, cocoa powder, honey or maple syrup, and vanilla extract until smooth and creamy.
-
Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of frosting on top. Place the second layer on top of the first and frost the top and sides of the cake.
-
Decorate (Optional): You can also decorate the cake with fresh berries, nuts, dark chocolate shavings or something more delectable such as chocolate truffles!
